Las Quekas: The Unassuming Mérida Quesadilla Stop You’ll Return to Again and Again

One of the great beauties of Mexican cuisine is that almost everyone seems to get it just right.  Whether it’s a street vendor pressing tortillas by hand or a top-tier restaurant like Biko or Pujol layering flavours with monastic patience, the spirit remains the same: do it properly, take your time, and let the ingredients speak.

Somewhere between those two worlds sits Las Quekas — humble, cheerful, and absolutely irresistible.

While wandering through downtown Mérida, just across from the cathedral, we stumbled upon a modest little spot painted in bold orange and yellow — it shouted “franchise.”  But the steady stream of customers drew us in for a closer look, and the moment the aroma of steaming huitlacoche and melting cheese reached our noses, resistance became futile.  We stepped inside, and what followed quickly turned into a brief but passionate affair.

With five locations scattered around the city, Las Quekas is a indeed a franchise — but one that delivers exactly what you want when the craving hits.  Fast, fresh, made-to-order quesadillas that feel indulgent while remaining wonderfully simple.

 We were only in Mérida for two days, yet we managed to stop five separate times.  Each visit was justified the moment the crispy tortillas arrived, generously filled with ingredients like rajas poblanas (strips of poblano peppers with onions in a creamy sauce) or huitlacoche with corn, zucchini blossoms, along with the full range of meat fillings.   Every combination melted beautifully into that soft white cheese that turns molten and stretchy in just the right way.

At a little less than a dollar each, Las Quekas’s quesadillas are just about the perfect meal — hearty, joyful and dangerously easy to order again.
